Hello,Nothing has been removed.
Go to Options -> Video Settings -> Quality and find Connected Textures. Set it to Fast or Fancy.

Make sure Optifine is enabled in the launcher.
If you are using 1.15.x versions, then there is no Optifine available (you need Insider to use it).
