Well, because it's SOUP. In an honest answer, soup is one of the best server in my opinion because that's where I bonded with the community and met new friends. I made many memories on there and it's now an nostalgic feeling whenever I think back on those days. I genuinely miss the soup server and even if it were to be added back, it wouldn't be the same as the one from 1-2 years ago.
