As a long term pvper i can explain this! Basically if two players sprint at each other and then attack with swords, one is likely to have a better internet connection and then get the first hit. The advantage of this is that if you get the first hit, it means you will likelly get a "combo" where you can hit the other player multiple times in a row without them being able to hit back properly, often winning the fight.
You cant get a combo like that if you arent sprinting, and being hit backwards with a fishing rod breaks players sprint momentarily. So essentially if you time a fishing rod hit, you can break the othet persons sprint and therefore be the one that gets a combo.
Now days its not very noticable because theres a button to hold for sprinting, but in the days where double tapping w was the only way to sprint, if you were hit with a rod, you would nee to retap w to sprint again which left a big open door to get one of those combos.
But thats how it works! You might be able to look up minecraft pvp combo and see those attacks going where one player gets like 8 hits after they sprint at each other, theyre basically from good timing and attacking on a good angle.
As a not you can also do the same trick with a bow and by lighting the other player on fire, as both of those break sprint momentarily:)
