You could put up an argument saying Iron is easier but the way you presented it shows you think they are very similar which is not true.
The usage of both bow and sword are different. In Iron bow is used to inflict damage. The sword is mostly used after one of the players has no more arrows left or when they are close to running out. It is very rare to see someone using their sword while they still have plenty of arrows left.
Diamond has a completely different play style that mostly revolves around critting, block hitting and bow comboing. Altough the bow is also used to do damage its not the primary use.
There are a couple of reasons on why I think it has the lowest skill cap compared to the other kits.
1- Reaction time is not essenttial in diamond. As long as you know how to aim and when to jump you won't have any issues
2- Without the bow it is mostly trading and blockhitting there isn't ny kind of strategy you could use. With the bow it just getting used to your delay, when to turn around and a bit of bow aim.
3- The diamond strategy or the play style hasn't had any change or improvement to it for seasons. Take Build UHC for instance. Since it first came out how much has changed? Compared to Season 9 hundreds of people now use lava and blocks frequently. Water is being used in new ways and the bow is getting abused.
This isn't necessarely a bad thing but in a ladder where there isn't really much to do, people can learn to play it easier than the rest and be near the skill cap.

archer has the highest skill cap imo
Edit: You're just not good at the kit that's why you think it's luck based.

All kits are unique in their own way; they all have a lot of things to worry aboutThe kit I would say has the lowest skill cap is probably build uhc, not because its easy, but because its the most played kit, so there are relatively more under-skilled players.

I'm no god in the kit so I'm not going to have the best answer, but there are small things you can do such as:
Gapple Advantage (Eating gapple before they do)
Taking of armour (Give Durability advantage)
W-Tapping (Usual Speed 2 Strat / Skill)
Strafing (Usual Speed 2 Strat / Skill)
Knowledge of when to Block Hit or Crit
There are a lot of small things that can be done in a GApple match which add up and make certain players extremely difficult to fight. Because there are no Pots and its raw melee its much more fast paced and the people who can adopt these strategies for the entire duration do have a massive advantage over other players
