If you mean the global chat color you have to do this:Setting (The clock in the hotbar) -> Chat Settings (The second sign in the panel) -> Click on "Toggle Global Chat Color" and select a Color
If you mean the chat of a single player you have to do this:
(If you've a player chat colored, you've probably marked him with /mark <player_name>)
Do /unmark <player_name> to unmark and reset the player chat to white, do /mark <player_name> <new_color> for re-mark the player with the new color.
