Sometimes my game randomly lags and tabs into the setting screen without me pressing ESC. I've played for hours on end with other clients, but this issue never seems to come up, or its just some coincidence.

Could you send some video evidence of the bug so that I can reproduce it ?
This could also just be a coincidence. If you have USB devices plugged in, and the cable connection isn’t that stable, the device usually plugs and unplugs itself causing Minecraft to pause.
