1 - Sword (R)2 - Lava (mouse side button)
3 - Rod (Q)
4 - Bow (scroll)
5 - Blocks (4)
6 - Golden Heads (another mouse side button)
7 - Golden Apples (another mouse side button)
8 - Food (scroll)
9 - Water (Tab)
I have a very odd set up for hot keys but it works for me. Plus my inventory is my middle button on my mouse rather than E.

Why do you keep Steak in your hot bar? You never need it for build, do you?
