Pot Skill Requirements:Clicks
Strafe
Pot accuracy
Resetting sprint (wtap..)
Applying pressure [aggro pearling, knowing when to pot and speeding up / eating early]
UHC Skill Requirements:
Clicks
Strafe
Utilizing terrain
Bow accuracy / strafe
Efficient use of buckets
Rod timing / accuracy / speed
Applying pressure [Rod, bow, lava, healing early, pregapping, block spamming]
Skill Gap:
Would you be more likely killing Danteh, Tylarzz, Gaxriexz or jdegoederen in BuildUHC,
or beating Verzide, Drummer or Stimpy in NoDebuff?
My Opinion:
In my opinion UHC has a wider variety of skills to adapt to and does take more skill and mastering (as HIVLIK said in his video). In pot the skill gap really isn't that big and a cheater can come on and kill anyone, whereas in BuildUHC you can use many strategies to kill the cheater. Mastering the rod actually takes a lot longer than the pot players think, they rely on sword in BuildUHC and they think they're correctly timing the rod when they actually aren't. In pot there aren't many variables that actually define how good a player is, once you can aim as well as Stimpy can and you are decent at strafing / wtapping / potting (really not that hard to master) you are literally just hoping you'll be the next one to get the combo. In BuildUHC the top players have so many different strategies they can use on other players and game-sense is much more required.

To be honest, I feel that UHC is more difficult. If you think about it pot pvp requires skill but not as much skill ask UHC. In UHC you have to rod, lava bucket, water bucket, use blocks, and manage your gaps. In pot pvp, yes you have to manage your pots, but honestly there's just more that that goes into uhc.
